Cooking has been one of my greatest passions since I was a teenager. It’s not just something I’m good at—it’s a source of peace and joy for me. There’s nothing like the moment when someone takes that first bite and genuinely loves what I’ve made. That connection through food is priceless.

In today’s fast-paced world, finding time to cook balanced meals can feel impossible. But I believe it doesn’t have to be. Soups and stews are my go-to because they can be prepped in advance, and somehow, they always taste like they were made fresh that day. They nourish both the body and soul.

Tomato Basil Soup

Tomato Basil Soup Ingredients (Serves 4-6)

2 lbs fresh tomatoes 

1 medium onion (diced)

1 garlic bulb

1 cup fresh basil leaves (loosely packed)

1 1/4 cups vegetable broth (or chicken broth for a richer flavor)

2 tablespoons olive oil

1 TB tomato paste (optional for deeper flavor)

1TB Italian seasoning

2tsp salt (or to taste)

1 tsp black pepper
